- 1 24oz can of diced tomatos
- 2 cans of black beans (low sodium)
- 2 cans of kidney beans (low sodium)
- 1 large red onion
- 2 carrots
- 2 celery sticks
- 1.5 Tbs chili powder
- 1 Tbs garlic
- 1 cup frozen white corn
- 1lb ground beef (>10% fat) OPTIONAL
Dice onions, carrots, and celery. Rinse the beans. Combine all ingredients in a large pot and bring to a boil. Cover, reduce heat and simmer for 1 hour stirring occasionally.
Makes 6 servings w/out the beef
